Veggie Mayo forever
My dear friends, it's time to talk about something that, when I discovered it, opened an entire world in front of me.
A delicious mayo, much better than that the traditional one, so light and easy to prepare!
Ok, this is a fantastic base for many dressing, sauces and recipes. With it you can prepare jummy potato salads, "insalata russa" (Russian salad), mock "vitello tonnato" (veal with tuna sauce), delicious sandwiches and much more... And don't forget all its variations: with ketchup, with garlic and parsley, with onion and basil, with capers and olives, with saffron, curry, cumin seeds, etc...
Use your fantasy!
Ingredients:
120 ml of unsweetened, plane soy milk
80 ml of 1/2 sunflower seeds oil and 1/2 extravergin olive oil
Some drops of squeezed lemon
Salt
A pinch of turmeric powder
1/2 ts of mustrad
Preparation:
With your loyal and irreplaceable blender (Minipimer....) put in a high plastic glass the soy milk. Than add, little by little, the oil. Move the blender up and down to incorporate as much air as possible.
Then, it will happen a magic when you'll put also the lemon juice... (in scientific terms, it will coagulate!). And the mayo will become firm and super creamy.
This is the moment to give color to your mayo: add some turmeric powder, yes!
Then add salt and a little quantity of mustard.
It's done ;-) now it's your turn: use it on the bread, in a salad, with some crunchy, fresh vegetable and also (believe it or not) also as a moisturizing face and hair mask!!! Wherever you like!

Oh, I love those old, stylish, very 800's gravy boats! Now they are actually disappearing from our homes but... I'd like to use one of them for my veggie mayo. Just to combine new and old together, I love it!

Well, do you have any suggestion about how to combine mayonnaise with a song? Mmmmm... This is quite tricky! Let's think about something "old" but always modern. Maybe I found it...I am thinking about something light, smooth and tender. Something that you can enjoy with no worries or hurries. Why not this enchanting voice?

Another extraordinary woman: Julia Child. I really like the scene in the movie Julie&Julia where Julia explains the true secret for a perfect mayonnaise, she is so passionate! Unfortunately, I couldn't find that particular scene, but I really did loved also this one:

Encinitas breakfast
I am definitely a lucky girl.
Yes, I am so blessed. Why? Because I have the opportunity, almost every year, to go to an amazing and special place in the world: Encinitas.
Encinitas is a lovely little town on the Ocean, just between Los Angeles and San Diego and I consider it my Paradise on earth. There is a particular reason for that: it's one of the places where Paramahansa Yogananda lived and the vibration left by him is so touchable, so breathable, so close to the heart that, even if you do not know why, you find yourself happy, in peace and full of love inside.
And what I could say about the nature? The dolphins surfing through the waves, the whales swimming with their white puffs on the horizon, the hummingbirds, flying joyously, seem that they have so many things to do! The SRF Gardens on the cliff are my oasis of peace where I can find my purest self, my most noble thoughts, my deepest feeling of love.Yes, LOVE. This is the kind of vibration you can feel there: unconditional, universal, purest love that permeates everything.
That's why I go there always. I love that LOVE!
So, can you imagine, in a place like that, which kind of delicious food you can find? Just full of love, energy and health!
I have, of course, my favourite places... for example, the Darshan Cafè. It's a-d-o-r-a-b-l-e!
Their almond croissants are so wonderful that I still wake up in the morning, here in Italy after one month (!), with the craving of that perfect, fragrant, unique croissant...!
Another fantastic delight that I really enjoy at Darshan is their fresh squeezed orange juice with almonds. Actually it's an ayurvedic drink, very healthy for the body, in particular during fasting period.
If I am in Encinitas and I am just coming back from the Swami Beach, I can't skip to go to the Swami Cafè. You have to try their mock turkey sandwiches: vegetables, sprouts, whole bread and this unbelievable soy turkey... jummy!
The Lotus Cafè is another lovely place where you can eat amazing veggy burgers, soups, salads and indian food and drink fresh fruit and vegetable juices. There you drink LIFE indeed!
In my vacations in Encinitas I do love to start the day with what I call an "epic breakfast": the California Benedict. The Saint Tropez Cafè serves this unforgettable eggs with, aside, a fruit salad, baked potatos and a mexican sauce.
Here is the recipe, with some adjustments ;-)
Ingredients for two:
2 eggs
1 middle size, rounded, whole grain loaves
1 avocado
1 rounded big tomato
veggie mayo
salt/pepper
Preparation:
Cut in the middle the loaves and toast them for a while just to make them a little bit crispy.In the meantime cook the poach eggs. Do you know the "perfect poach egg technique", righ? When the water is almost boiling, lower the heat under the pot, take a spoon and create a vortex inside the water... there you'll break the egg! The vortex will envelop it in a nice and white little dress. Just perfect!
Ok, while the egg is cooking, cut the avocado and try to make some rounded slices, the same size of the bread. Same thing for the tomato, just one slice per bread.
After 3/5 minutes it's time to drain the egg and create a wonderful tower:
the half loaf, the tomato, the avocado and, on top, the egg.
You can add salt and pepper and, like a jummy cascade, some veggie mayonnaise. Actually at the Saint Tropez Cafè, they use hollandaise sauce but to me it's a little too buttery...You can choose what you like most of course!
Setting the table:
Do you have a sunny day? Take it. Do you have an immense ocean waiting for you outhere? Find it. A surfboard? Bring it. Do you have an eternal springtime following you in every season? Feel it. An enchanting Hermitage on the cliff full of blissfull vibrations and lovely persons in meditation? Mmmm.... no? You have to go there! At least buy a palm tree and try to be in a California state of mind!

Easy Easy Sweety Sweety
I am keeping on with my "new year promise" to my hubby: every day a tasty, jummy, funny delicacy.
Yesterday evening I was wondering about a fresh, easy, sweet dessert.
That's what I created with some goat cheese and some delicious, juicy, reddish strawberries! It's like an indian lassi but in an italian version!
Ingredients for two:
100 gr of fresh goat ricotta
8/10 little strawberries
2 T.S of raw brown sugar
some grated lemon peel
some grated white chocolat
some fresh mint leaves
Preparation:
Just mix all the ingredients together (except the white chocolate that you will put as topping...) in a blender. Then put the cream in a beautiful cup or glass and refrigerate for two hours. The contrast between the "goaty" taste of the cheese and the freshness of the fruit and the mint leaves it's definitely called "Welcome Summer!".
Enjoy it with someone you love.

Bahia Tatin

Una delle esperienze più belle della mia vita è stata sicuramente un viaggio in Brasile nel 2010.
Non avrei mai immaginato di vivere un tempo così magico in quella terra, a Salvador de Bahia, letteralmente inondata dell'affetto della mia cara, meravigliosa amica Jananina e dai colori, dai profumi, dall'oceano, dall'immensità della natura, abbracciata da Yemaja, la Madre Divina del mare, in tutta la sua "materna vitalità"...
Janaina è una delle fanciulle più belle che abbia mai visto. Piena di luce dentro e fuori. E' un concentrato di dolcezza, energia e determinazione. E' un'amica dell'anima.
E così, una sera di autunno, io e il mio compagno di avventure abbiamo pensato e deciso di prenotare un volo per capodanno e di lasciarci avvolgere dal caldo e vitale ritmo brasiliano, facendoci e facendo a Janaina l'immenso regalo di poterci riabbracciare.
Ero già stata in Brasile in precedenza, ma con occhi diversi, un po' sul "chivalà", sia per timore di tutto quello che purtroppo spesso si legge sui giornali di violenze e aggressioni e un po' perchè forse non ero riuscita a cogliere un aspetto davvero meraviglioso di questo paese: la spiritualità che è insita nella sua natura. In effetti... mi ero immersa un po' troppo nel frastuono del Carnevale di Rio e nei clichè più turistici.
Beh, questa volta è stato diverso... e tra le meraviglie di cui ho potuto godere visivamente, tattilmente, olfattivamente ho assaporato anche tutto un mondo di gusti e straordinari contrasti che mi hanno davvero conquistato.Con tanta saudade per quel periodo magico vissuto in Brasile, vi propongo un dolce che racchiude in sè alcune delle mille e deliziose sfumature di questo straordinario paese: la Bahia Tatin!
Il contrasto tra la dolcezza dell'ananas e l'avvolgente aroma del lime vi rapiranno al primo assaggio...
Ho volutamente trasformato, nel limite del possibile, alcuni ingredienti originari (burro, zucchero bianco, farina bianca...) in una versione più salutare e decisamente più integrale.
Ingredienti:
150 gr di farina integrale
4 uova
Olio di girasole
Qualche fetta di ananas, fresco e maturo
140 gr zucchero integrale
50 gr di zucchero a velo
50 ml di latte di soia
1 c di polvere lievitante (baking powder)
1 pizzico di vaniglia
1 pizzico di sale
Il succo di un lime
Preparazione:
Per prima cosa, accendete il forno a 180 gradi. Il re della ricetta? Il caramello!
In una casseruola fate sciogliere 1c di olio di girasole. Aggiungete 80 gr di zucchero integrale. Fate caramellare lo zucchero, senza bruciarlo! Mi raccomando, non assaggiatelo con il dito, anche se vi sembra assolutamente innocuo: in realtà sarà ustionanteeeeee. Ho già provato, vi assicuro...
Ci vorranno circa 10 minuti.
Imburrate una tortiera a cerchio apribile (diametro 24 cm) e inserite tra la base e il bordo un foglio di carta forno.
Ora, versate il caramello sulla carta forno e spalmatelo bene. Deve diventare un bel "lettino" per le fette d'ananas... Ora, infatti, è il loro turno: disponetele sul fondo, sopra il caramello dorato.
Ecco l'impasto della torta... se avete una planetaria, è il momento di usarla!
Mescolate bene lo zucchero (60 gr) insieme all'olio di girasole (50 ml), quindi versate 2 uova intere a temperatura ambiente. Aggiungete la farina setacciata insieme al lievito, alla polvere di vaniglia e al latte di soia.
Versate l'impasto nella tortiera, sopra l'ananas caramellato.
Cuocete per circa 20/25 minuti a 180°.
E' il momento di sfornarla.... giratela quindi ancora calda, con un bel gesto artistico e atletico, e rovesciatela su una teglia da forno antiaderente.
Nel frattempo montate, sempre nella planetaria, i due bianchi d'uova. Quando la spuma sarà bene ferma, aggiungete lo zucchero a velo e, successivamente, il succo di lime.
Ultimo passaggio: spalmate i bianchi d'uovo sopra la torta che, con i suoi occhietti a forma di ananas, vi starà sicuramente fissando...
Infornate a 170° per 10/15 minuti.
QUE BOM!!!
L'apparecchiatura:
Se solo avessi avuto una valigia ancora più grande... mi sarei comprata sicuramente una statua di Yemaja, la Madre Divina del mare. Sarebbe stato fantastico cenare a lume di candela, con la sua figura illuminata solo dalla luna e dalle stelle. In realtà, se dovessi scegliere un colore per la tavola, opterei per il bianco assoluto. A capodanno in Brasile, dopo la mezzanotte, si corre in spiaggia e si offrono fiori, frutti e doni alla divinità del mare e ci si veste solo di bianco... E allora, bianco sia... in onore di Yemaja.
La musica:
Qui si apre un intero capitolo di meraviglie sononore. Sono decisamente in imbarazzo, non so proprio cosa scegliere... Si spazia dalla batucada brasileira, un'esplosione di energia pazzesca, alle atmosfere languide e rilassate di Joao Gilberto, Caetano Veloso... Per voi ho scelto un vero classico, senza tempo e senza età. Una vera magia.
Non resisto! C'è anche questa... contaminazione fantastica.
Ultima, promesso...
Il film:
Questo film mi ha divertito e fatto ballare parecchio...
Non potete assolutamente pensare di andare in Brasile senza aver provato, almeno una volta, a ballare la Samba... Sia che siate dei veri "tronchi" o degli abili ballerini, vi suggerisco questo ottimo tutorial!
Mi raccomando: il piede mi ruota verso l'esterno, il ginocchio mi molleggia e il gioco di bacino fa tutto il resto.
